I love Mexican food - it's one of my favorites but it's hard to have Mexican food without loading up on carbs. This recipe is low carb and was made in a crockpot so it was quick and easy to put together.
What we have here is, Carne Asada salad, with Pico de Gallo and a fresh squeezed skinny margarita.
I'm not a cook who measures, so I will share with you the steps.
Items needed for Carne Asada
fresh crushed garlic
Sea salt, cracked black pepper, cumin, chili powder,paprika, oregano, onion powder
Cut the flank steak up in small thin strips, and rub Sea salt, cracked black pepper, cumin, chili powder,paprika, oregano, onion powder and crushed garlic into the meat. Let sit at room temperature for about 15 min.
Mix up the marinade - squeeze the oranges, limes into a bowl (I use my Breville citrus juicer), add soy sauce, white vinegar, and olive oil together and pour over the meat mixture and cook in a slow cooker on low for 6-8 hours.
Items for Pico De Gallo
3-4 Roma tomatoes
sweet yellow onion
green bell pepper
jalapeno pepper - de- seeded
Very finely chop up tomatoes, onion, bell pepper, cilantro and jalapeno pepper ( I take out the seeds because I don't want it too hot) top with 3-4 tsp of coconut sugar and give a good stir and refrigerate. I like to mix this up at least 3-4 hours before use because it does keep getting better. Any sugar will do, but coconut sugar is what I keep in my house because it is low hypoglycemic and full of minerals, and taste great!

Pico de Gallo
drained and chopped carne asada
Chop up Romane lettuce or lettuce of choice, add some crumbled feta cheese, drain and chop up the meat, add a big scoop of pico de gallo, a scoop of sour cream, sliced avocado and a little salsa. I like to keep condiments separate, in the corners of the plate so that the bites can be "stacked" to the persons own preference.
Fresh Squeezed skinny Margarita
stevia or coconut sugar- (for simple syrup )
Hornitos gold tequila or tequila of choice
Bring 1 cup of water to a boil on the stove and add 1 cup of coconut sugar and stir until dissolved and let cool. For less carbs and calories substitute 6 packets or 6 tsp of stevia . This is our simple syrup.
Squeeze 1 orange and 12 limes. I make fresh margaritas, and use citrus in marinades all the time, so I invested in a Breville citrus press, because it makes everything faster and easier and gets every single drop out of the fruit so that nothing is wasted. You can find one here.
Take your margarita glass and if you like salt, salt the rim and fill the glass with ice. Take a shaker and fill up with ice, for 2 margaritas, put in 3 shots of tequila, 1 shot of grand marnier, add some of your simple syrup and some of your fresh squeezed citrus mixture. Shake real good, pour over the ice in your glasses and add a wedge of lime - serve and enjoy ;-)
