 Beef asparagus roll ups,  with horseradish sauce

 This is a quick, easy low carb meal.  This was one of those unplanned meals where I threw something together that turned out pretty good - just using what I had handy from the fridge and freezer because I didn't want to go to the store lol.  It was cold outside, here in Texas so I used my indoor grill - otherwise I could have cooked these outside over charcoal.

So what we have here - is roasted red cabbage, beef asparagus roll ups, creamy horseradish mustard sauce and a Chilton ( vodka, club soda, lemon with salt on the rim)

I'm not a cook who measures anything, unless I am baking - so I will share with you the steps.

           How to make Beef Asparagus Roll Ups

Items Needed For the Roll ups

Flank steak

Asparagus​

soy sauce

Garlic

2 oranges

2 lemons or limes

Red wine vinegar​

Olive oil​

For the meat: thinly slice  flank steak as thin as you can get it horizontally  - and marinate for at least 2 hours.

For the marinate : olive oil, soy sauce, 2 fresh squeezed lemon, 2 fresh squeezed oranges, a little white vinegar, lots of crushed garlic, sea salt and fresh cracked pepper. Mix all ingredients together and pour over meat and store in a zip lock bag  - let marinate for at least 2 hours - even longer if you have time.

Items needed for the horseradish sauce

Prepared horseradish

Sour cream

Mayo

Spicy brown mustard

Garlic

Tabasco

1 lemon

Salt and Pepper

Once you get the meat marinating go ahead and mix up the horseradish sauce it will taste better the longer it has been mixed up.

For the sauce: Use about 1/2 a cup of sour cream, 1/4 cup spicy mustard, 2 tablespoons of mayo, a jar of horseradish, crushed garlic, a few dashes of Tabasco, juice of 1 lemon, sea salt and fresh cracked pepper. Mix all together and store in the fridge - this keeps getting better and better the longer it is mixed up.

Sea Salt and Cracked Pepper ​

To roast the red cabbage - just pre- heat oven to 375 take a cookie sheet and line with aluminum foil - drizzle a fair amount of olive oil on the foil and then take any old layers off of the cabbage and slice into 1 1/2 - 2 inch  thick slices  - then cut in half. Drizzle olive oil  on top then rub on crushed garlic, sea salt and cracked pepper. Either slice a lemon and add a lemon to each piece or just squeeze the lemon over all pieces. Bake @ 375 for about 40 minutes until the outer edges start getting crispy.

For the roll ups: Heat up either an indoor grill or outdoor grill. I used my Le Creuset indoor skinny grill.( Love it- it comes in really handy).  Get the grill good and hot, brush with oil ( I use avocado oil because it doesn't smoke at high temperatures) cut off the ends of the asparagus and roll the meet around the asparagus and put on the grill - let cook on each side about 3-4 min. And serve.
